Gluten Free Pumpkin Muffins

‘‘Tis the season for all things Pumpkin and Spiced! As the Autumn season officially begins this weekend I couldn’t help but bake some pumpkin goodies! These fluffy pumpkin muffins are the perfect afternoon treat with a good mug of tea! Happy Fall y'all!


Ingredients
For the Muffins

  • 1 1/2 cups King Arthur Gluten Free Measure for Measure flour
  • 1 teaspoon baking powder
  • 1 cup canned 100% pumpkin puree
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon pumpkin-pie spice *
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon Apple Cider Vinegar 

* Homemade Pumpkin Spice Mix
3 Tablespoons Ground Cinnamon.
2 teaspoons Ground Ginger.
2 teaspoons Nutmeg.
1-1/2 teaspoon Ground Allspice.
1-1/2 teaspoon Ground Cloves.

Topping

1/3 cup all-purpose flour
1/4 cup packed light-brown sugar
3 tablespoons granulated sugar
Pinch of salt
6 tablespoons cold unsalted butter (cut into small pieces)
